Both of these books present a hard look at the food industry and our rising rates of obesity and diabetes that coincide with the introduction and proliferation of fast food and processed foods in our Standard American diet. Eight Doctors Talk About The Myths of Cholesterol and Saturated Fat in the Diet This brief video captures summary thoughts on saturated fat and cholesterol and the role it plays in our diet. It briefly focuses on the original Russian studies where rabbits were fed cholesterol and then developed plaque on their arteries. This was then extrapolated to a human model. The problem, as the video suggests, is that rabbits are not omnivores, and were not bio-medically evolved to handle cholesterol. The video goes on to discuss the Ancel Keys study, which ignored countries with populations that did not fit Key's expected results for his lipid hypothesis ( saturated fat = elevated cholesterol = heart disease). A fascinating compilation of clips on this very paradoxical issue.
